WHAT DO THEY LOOK LIKE?

The bison is an impressive animal to behold. The adult male is between 5 and 6+ feet tall and may weigh between 1,800 and 2,800 pounds. The delicate female checks in at a slender 800 – 1,100 pounds. Both male and female have two types of hair - the shorter is on most of their bodies and the thick neck and shoulder hair is soft as lambs wool. The bison talk to each other in grunts and signal with their tails, if the tail arcs up.. ‘beware’!  From the journals kept by Lewis and Clark we learn that the bison is a gentle creature: "..we saw a great quantity of game today particularly of Elk and Buffaloe, the latter are so gentle that the men frequently throw sticks and stones at them in order to drive them out of the way."

Mother Nature has Buffalo mothers on schedule! Typically they have their calves on or near Mother’s Day each spring. We anticipate this beautiful birthing time with hope and renewed commitment to buffalo families. North-Wood Buffalo is hoping for at least one calf this spring too. For the newborn buffalo calf, the transfer of ancient wisdom begins here: A tender lick, a gentle nudge, her reassuring warmth … a refuge of buffalo love and protection.

Buffalo also provide for us, as they did the ancient ones, with heart healthy red meat and nutrition second to none, not the elk, the salmon or wild fowl. That was also the message of the White Buffalo Calf Woman to the Native Americans. The Bison gave all of themselves, which is everything we need to survive, and nothing was to go to waste.

There are long lists of all the things that can be enjoyed with their bounty just a few of which are: Heart healthy red meats, rawhide, wool, bones for crafts, weapons and utensils, moccasins, drums, ropes, boats, pipes, sleds, paint, fuel, thread etc.

They Could… The fastest thoroughbred can run 35-40 MPH and that’s exactly how fast Buffalo can run!  They can also turn on a dime..  at least faster than a quarter horse!

If you have a media player on your computer e-mail us a request to receive a video clip of the North-Wood Buffalo showing off with a practice race around their snow track this past winter in McCall. They sure would like to go to Kentucky for the Derby! Mint juleps, fancy elaborate hats, and the fastest two minutes in sports.

The Kentucky Derby is the day anyone can be a Southern Belle or a Kentucky Colonel, just by cheering on your favorite thoroughbred (or buffalo).


Throw a party to remember, or a romantic dinner for two with southern specialties--
You can throw a part for any special day.. or an Un-special Day.  If it's for the Derby don’t skimp on the ‘4 Roses’ bourbon or the buffalo on the Bar-B. You don’t need to be at Churchill Downs to have a rip-roaring Kentucky Derby party. Derby parties come in all shapes and sizes, an intimate dinner for 2, high society black-tie soirees or a backyard T. Mmmmm I can smell it now... Steaks, Burgers, or sliced Roast Bison in Louisville tradition. Did you know there are more Buffalo in Kentucky than Idaho? So, Start off with Roses for your center piece, then there’s ‘Run for the Roses’ Burgers or Steak with Churchill Downs Morel Sauce (we have those now too), Eighth Race Finish Line Salad, Thorough-garlic-Bred, and Top it off with Derby Hat-Bourbon Pecan Cake. The chef should wear a Derby and his Southern Belle a lovely hat with Roses while sipping her Mint Julep of course (virgin, or not)!

The effectiveness of many antibiotics has begun to decline. One cause is the overuse of antibiotics in healthy livestock which, when eaten, leads to high levels of resistance in the bacteria that cause human disease lowering the effectiveness of the same antibiotics on our own bodies.

Bison are raised in a better way in America. Virtually all are pasture-raised, not subject to the confinement of feedlots and growth hormones prevalent with U.S. beef. Several other countries have banned these hormones because of potential effects on human and animal health such as obesity, its time for change.


THE VALUE


The value of Bison is not what you pay, but what you get in return. Nutritionally you are getting more protein and nutrients while getting less fat and calories. Bison meat is a dense meat and tends to satisfy you more while eating less. Ahhhh, Perfection! There are many stories of weight loss by just switching to Bison. Locally grown produce and livestock is your healthiest and safest bet. So stock up at the Farmers’ Market this spring and summer!

HEALTH


Bison are handled as little as possible and spend their lives on grass, much as they always have. They are not subjected to questionable drugs or hormones. The members of the National Bison Association felt so strongly about this that they have a resolution opposing the use of these substances in the production on Bison meat. "Hormone-free bison raised on pesticide-free grasses".


Now.. about being BUFFALOED..

The term "Buffaloed" which means to "Intimidate" is in the animals’ display of confidence and authority.

The buffalo (bison) is a powerful animal, and a herd of them thundering across the Great Plains must have been pretty intimidating. So it’s not hard to see how this sense of ("to frighten or intimidate") of the word arose. Capable of galloping at 45 mph, the largest mammal on the continent, is always ready and quite capable to fight to the death (usually not his) to protect its "family".

HEALTH? You want to be strong and healthy, able to survive what comes your way, and they say you are what you eat? Consider adding Buffalo to your exercise routine with ground bison and what we call whole "muscle cuts" such as roasts, steaks and filets a great variety of bison offerings. The meat’s healthy number percentages of less fat, less cholesterol, higher protein and iron, no growth hormones or steroids gives you more reason to include it in your diet.


Those health benefits justify the extra $3 to $4 a pound in the price of bison versus other animals including skinless chicken breast and salmon! A healthy young harvested bison (which is only what we provide) translates to approx. 400-500 pounds of steaks, filets, roasts, ground meat and ribs. Oh, about that: Did you know that Bison have an extra rib, a handy piece of knowledge to retain!
